A 3 course meal through my own perception of
3 places close to my life:
-First, a corn tortilla figure representing Panama´s indigenous and Afro-Antillean cultures on top of a mango-chili and chombo pepper sauce with the plate taking the rough handmade style of its inspiration.
-Second from Israel, a pita baked around a ceramic sphere where hummus is inserted afterwards. It sits on a Israeli stone with onions, olives and a pepper on the side. The architectural motives and intricate esating way inspired by the hard Israeli personality.
-The dessert, inspired in France, sweet and simple to end the meal, 3 jellies: champagne and vanilla, berries and black pepper, rose and almonds; sweet, sour and salty. As you get to the base each flavor is eated according to each different texture.
